Summer BBQ Snack Ideas

If you’re anything like me, you have 2 or 3 “go-to” dishes you bring to parties.

Mine usually include a bean salsa dip, or a nacho dip.

Recently, I was invited to a summer BBQ and wanted to switch things up – but I couldn’t decide on a snack that was quick, easy and delicious.

I ended up finding something light and fun to bring, and was also inspired to blog some ideas for anyone else who needs some inspiration.

Cheesecake Strawberries:

What you’ll need:

Strawberries
Cream cheese
Graham cracker crumbs
Melted chocolate (optional)

1. Wash and hollow out the strawberries with a small knife or spoon. 2. Stuff strawberries with cream cheese. 3. Dip tops in graham cracker crumbs. 4. Dip bottoms in melted chocolate and refrigerated until ready to serve.

Endive Appetizer:

What you’ll need:

1 Belgian endive
2 cups ricotta cheese (I used PC blue menu)
1/2 cup sliced almonds
1/2 cup golden raisins
3 tbs freshly chopped chives
1 tsp salt and pepper

1. Cut ends off of endive, wash, and carefully peel leaves and place on plate. 2. In a bowl, mix together cheese, almonds, raisins and chives. 4. Spoon mixture onto leaves and serve!

Mini Grilled Cheese Sandwiches with Chutney

What you’ll need:

Sliced bread
Cheese (I prefer to use aged cheddar)
Any kind of jam or chutney

1. Butter both sides of bread.  2. Spread jam or chutney onto bread. 3. Thinly slice cheese and place on bread. 4. Grill, cut and serve!

Mexican Caviar

Also known online as ‘Moe’s Mexican Caviar’, this dish is always a hit at parties. I recommend serving it with a bag of Beanitos, because lets be serious – they are amazing!

Mix together the following ingredients and bring to a boil, then stir until the sugar dissolves.

1/2 c sunflower oil
1/2 c sugar
3/4 c apple cider vinegar
1 tbs of water
salt & pepper

Cool the dressing for 20-25 minutes in the fridge, then pour over the following:

1 cup chopped green onion
1 cup chopped green pepper
1 cup chopped celery
1 large can of black beans
1 large can of lentils
1 small can of corn

Greek Feta Dip

Mix crumbled feta cheese, pitted and diced kalamata olives, and olive oil.

Serve with pita bread, or pita chips.

Prosciutto Wrapped Pears

Simply slice a ripe pear, and wrap each slice with a sliver of prosciutto. You can also add blue cheese if you’d like.
