In what’s been dubbed ‘steak night’, we get together with friends and family every Friday night to devour an entire cow and various side dishes.
I will never get sick of steak, but with the influx of tomatoes and cucumbers from our garden I wanted to think of new ways to use them, besides in a salad.
The first thing that came to mind was Greek food, so I proceeded to send out the invites to host ‘Greek night.’
Colin and I were in charge of making chicken souvlaki, tzatziki and tabbouleh, his Dad brought lamb and pita bread, and close friends of ours got a gold star for effort after bringing potatoes and homemade baklava!
My homemade tzaztiki was extremely easy to whip up in my food processor, and was a hit with guests!
2 cups plain Greek yogurt
1/2 cup sour cream
2 cucumbers, peeled and sliced. (depending on size of cucumber you can also only use one.)
2 tbs olive oil
1/2 lemon, juiced
Pinch of salt and pepper
1/4 cup chopped fresh dill
3 cloves garlic, peeled and chopped
Throw all ingredients into food processor & blend.
Cool & serve with bread, crackers, veggies, meat… the options are endless.
